Slow Food (Part Two)
After simmering the fennel seeds, garlic and herb salt in the olive oil for awhile, I put the mixture into my mini food processor and turn into a paste.

Here is the finished product:











Here is some of the paste on the roast.












Here is the roast, completely "pasted" and sprinkled with salt and pepper.











It's a wrap. The whole roast is double-wrapped in foil. Now it is spending the night in the fridge to get all nice and flavorful. Early tomorrow morning, I will get up early and throw the whole foil-wrapped creature into a Pyrex baking dish and lob it into a 275 degree oven for about 5 hours. Posted by Picasa
