Bye Bye BLT, Hello PAT

pancetta,
arugula and (heirloom)
tomato. This sandwich was very good, although I had to remove about half of the pancetta after the first bite...the slices were thicker than what I usually get and it was just too much pancetta in one serving. (Did I just say that?) Anyway, it was a delicious end-of-summer supper. The sandwich also had some chopped up green onion, which I started adding to BLTs when I was in high school. In the last few years, I've taken to only toasting one side of the bread too. (The toasted sides facing inward.) That way, I still get toasty goodness AND the roof of my mouth

remains unshredded. (A boon to BLT/PAT eating pleasure.)
